Before this recipe making rice was a gamble because I was never quite sure how it would turn out – sticky? Dry? soupy? We are seriously obsessed with this rice and will never go back to old rice recipes- the texture is perfect every time. The trick is rinsing the rice in water for 15 minutes and using the 1:1.5 ratio.
- 1 cup Jasmine Rice
- 1 tsp Salt
- 1 package Mushrooms
- Use 1:1.5 ratio (rice : water). Put rice in strainer with bowl underneath. Strain and rinse rise a dozen times before setting it aside to soak for 10-15 min. You are getting rid of excess starch that can make it sticky so it is not possible to over strain. Rinse till water runs clear, or so. Add to boiling salt water (1heaping tsp salt per cup of rice). Bring back to boil and allow to boil uncovered without stirring until water level = rice level. Cover and simmer on low 10-15 min. Turn heat off and uncover. Let sit a few min without stirring. Fluff with a fork and serve.
