I have been craving sweets a bit more than usual. Â When this happens I find the best way to kick the sweet tooth is not to avoid sweets – because lets face it, thats not realistic. Â Instead to only allow myself healthier versions of my favorite treats, this way I can eat enough to satisfy my craving while not feeling bad. Â Here is one of my favorite healthy twistsÂ for pancakes.
- 1 medium banana, peeled and roughly chopped
- 2 whole eggs
- 4 Â½ tbsp grated coconut
- 4 tbsp flour
- Â¼ tsp baking powder
- 1 tbsp honey
- coconut oil for cooking
- In a medium bowl use a fork to mash banana, eggs and honey until smooth and fluffy. Add shredded coconut. In a separate bowl stir together flour and baking powder – add to wet mixture. Heat up a tiny dollop of coconut oil in a non-stick pan. Cook pancakes in batches, about 2 tbsp of mixture. Keep the heat on low/medium and cook for aprox 1:30 mins on each side. You know itâ€™s time to turn them over when little bubbles start appearing in the batter. Serve with maple syrup or fruit and cool whip.
In a medium bowl use a fork to mashÂ banana,eggsÂ and honeyÂ until smooth and fluffy.
Stir togetherÂ flourÂ and baking powder.
Mix wet and dry ingredients together.
Cook pancakes in batches, about 2 tbsp of mixture.
