Coconut Oil & Banana Pancakes

I have been craving sweets a bit more than usual.  When this happens I find the best way to kick the sweet tooth is not to avoid sweets – because lets face it, thats not realistic.  Instead to only allow myself healthier versions of my favorite treats, this way I can eat enough to satisfy my craving while not feeling bad.  Here is one of my favorite healthy twists for pancakes.

Ingredients
  • 1 medium banana, peeled and roughly chopped
  • 2 whole eggs
  • 4 ½ tbsp grated coconut
  • 4 tbsp flour
  • ¼ tsp baking powder
  • 1 tbsp honey
  • coconut oil for cooking
Instructions
  1. In a medium bowl use a fork to mash banana, eggs and honey until smooth and fluffy. Add shredded coconut. In a separate bowl stir together flour and baking powder – add to wet mixture. Heat up a tiny dollop of coconut oil in a non-stick pan. Cook pancakes in batches, about 2 tbsp of mixture. Keep the heat on low/medium and cook for aprox 1:30 mins on each side. You know it’s time to turn them over when little bubbles start appearing in the batter. Serve with maple syrup or fruit and cool whip.

Stir together flour and baking powder.

Mix wet and dry ingredients together.

Cook pancakes in batches, about 2 tbsp of mixture.
