Shitake Pho Soup with Ginger Garlic Pork

Fall is here and so is the season for soup.  This is my first fall in the south and Atlanta’s weather has been perfect– 0pen windows all week long perfect!
So I’m not snuggling up in blankets by a cozy fire eating soup quite yet, but I figured pho was a fantastic transitional season soup.  What is pho (Fuh)?  Pho is a Vietnamese noodle soup consisting of broth, linguine-shaped rice noodles, herbs, and meat. I love pho! Plus it is fun to mix in lots of yummy veggies and slurp the soba noodles. What are soba noodles?  They are made from fiber-rich buckwheat flour, which keeps you full longer.  Pho=healthy you=happiness

Shitake Pho Soup with Ginger Garlic Pork

  • 1-pound pork tenderloin, cut into 1-inch medallions
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil, divided
  • Two 6-ounce containers shiitake mushrooms, stalks discarded, sliced
  • 1 large yellow onion, sliced
  • 4-6 cups  low-sodium chicken broth
  • 2 tablespoons grated fresh ginger
  • 6.2 ounces soba noodles
  • 3 green onion, sliced
  • 3 tbs soy sauce
  • 3 large handfuls of spinach, rinsed and chopped
  • 1 jalapeno deseeded and chopped

Directions

In a zip-close plastic bag, combine the pork chunks, garlic and ginger, 1 tablespoon of the vegetable oil, 1 tbs soy sauce, 1 tsp red wine vinegar. Shake to coat evenly, refrigerate for 2 hours.

In a large saucepan over medium-high, heat the remaining 2 tablespoons of olive oil. Add the onion and jalapeño, cook until lightly browned–  about 10 minutes.  Add sliced mushrooms and cook for another 5 minutes. Separately cook pork mixture from the bag.

Cook soba noodles according to directions.

In a large pot bring the chicken broth to a boil, add cooked vegetables and pork.  Add spinach, 3 tbs soy sauce, soba noodles, chopped green onion.

Separately cook pork mixture from the bag.

In a large pot bring the chicken broth to a boil, add cooked vegetables and pork.

 Add spinach, 3 tbs soy sauce.
