Homemade Nut and Date Granola

Homemade granola is spectacular!  You ask, what makes it so spectacular?  I can think of several reasons:

1.) It is delicious
2.)The sweet smell it fills your house with for the entire day
3.) You can tweak the recipe to match your tastes
4.) Use what you have around the house and get ride of several end of the box ingredients
5.) Money saver
6.) Make it in bulk and eat it for weeks (or store it in the freezer)

To me, granola is like chili in the since that you can make so many different combinations.  As long as you stay within a few of the basic ingredients you cant go wrong.  Throw in a little of this and a little of that.  This is the reason why when making chili or granola I often have to get out a second pan for overflow.

Honey Nut and Date Granola via Vanilla & Velvet

Homemade Nut and Date Granola

  • 3 cups rolled oats
  • 1 cup steel cut oats
  • 3 tbs flax seeds
  • 3 tbs chia seeds
  • 1 cup almonds, chopped
  • 1 cup pecans, chopped
  • 1 cup dry dates, chopped
  • 1/2 c coconut oil
  • 1/4 tsp salt
  • 1/2 Tbs vanilla
  • 1/4 c brown sugar
  • 1/4 c honey
  • 3/4 Tbs cinnamon

Directions
Preheat oven to 325 degrees Fahrenheit. Line a baking sheets with foil. Combine granola, oats, flax seeds, chia seeds, almonds, pecans and dates  in a large bowl and mix together. In a medium saucepan mix together coconut oil, salt, vanilla, brown sugar, honey, cinnamon and heat just to a boil. Pour over dry ingredients and stir to coat, I find using your hands to be best. Spread mixture on baking sheets.

Bake for 30 minutes, stirring once half-way through. Allow to cool completely.

Mix together rolled oats, nuts, dried fuit, seeds and whatever else you think might be tastey.
Bring coconut oil, salt, vanilla, brown sugar, honey, cinnamon and heat just to a boil.

Pour wet mixture over dry ingredients and stir to coat, I find using your hands to be best

Bake at 325 for 30 minutes- mixing around after 15 minutes

My favorite way to eat it is with almond milk and fresh fruit!  Store in an airtight container.  You could also freeze it if you want it to last a long time.
