This pasta is one of my favorite summer time meals. Â I have been a lover of lemons for some time now and the idea of mixing lemons with pasta falls in the middle of delicious and perfection for me. Did I mention this recipe is crazy easy to make! What makes it so easy? Â Clean up! You only need one pot – no strainer needed! Â It takes less than 20 minutes to whip together and always turns out delicious; great leftovers too.
Healthy Lemon Broccoli Pasta
- 29 oz Chicen Broth
- 3 tsp lemon juice
- 1 tsp gr lemon rind
- 1/4 tsp pepper
- 6 oz angel hair pasta
- 3 c. BroccoliÂ Florets (can be frozen)
- 1 1/4 c.Â low fatÂ or lite sour cream
- 2 ozÂ parmesanÂ Cheese
Combine and boil chicken broth, lemon juice, lemon rind and pepper. Â Add Pasta and broccoli, simmer (without a lid) until noodles are cooked. Do not Drain! Â Stir in Â Sour cream and sprinkle with parmesan.

Combine and boil chicken broth, lemon juice, lemon rind and pepper.

Dont forget to rollout the lemon before you slice! (i forgot) Â Makes it easier to juice.
I usuallyÂ juiceÂ the lemons over aÂ separateÂ bowl to prevent seeds from sneaking into the pasta.
Once the water is boiling add the noodles.
And lots of broccoli!
Feel free to dress it up! Â I added some chicken in this version. Â Remember: you do not need to drain the broth!
Once the noodles are cooked add the sour cream andÂ parmesanÂ cheese.
Stir together and serveÂ immediately!
