There is one thing you should know about me before you start reading my recipes and notice a common trend. Â I LOVE bananas, always have. Â I think it is their neutral taste. Â Perfect for the morning. Â Perfect for a snack. Â Perfect for dessert when you are tricking yourself into thinking you areÂ eatingÂ a huge mountain of ice cream and half of it is cut up bananas (I highlyÂ recommendÂ trying this). Â It is the perfect food.
So clearly one of a banana lovers favorite foods would be… banana bread!
Therefore I am on a quest. Â A quest to find the best banana bread recipe out there. Â I usually make my mom’s banana bread, but I decided to explore around… to make sure i’m not missing out on any amazing recipes! Â The first recipe I tackled was from the lovely blog of SmittenKitchen
Adapted by Smitten Kitchen Jacked-up banana breadÂ (minus the bourbon)
- 3 to 4 ripe bananas, smashed
- 1/3 cup melted salted butter
- 3/4 to 1 cup light brown sugar
- 1 egg, beaten
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- Pinch of salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- Pinch of ground cloves
- 1 1/2 cup of flour
Preheat the oven to 350Â°F.
In a large mixing bowl stir together melted butter and the mashed bananas. Mix in the sugar, beaten egg, and vanilla, then the spices. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered Â loaf pan.
Bake for 50 minutes to one hour, or until a tester comes out clean. Cool on a rack. Remove from pan and slice to serve.
Mix butter into the mashed bananas in a large mixing bowl.
Just keep stirring! Pour mixture into a buttered 4Ã—8 inch loaf pan.Â And what makes banana bread even more delicious? Â Chocolate chips! I added a couple handfuls on top.
Bake for 50 minutes to one hour, or until a tester comes out clean. Cool on a rack.
